Practice here is everything. Before you tackle your finial or acorn, you need to be in control of what you are doing. Do take your time and experiment. Try lots of different cutting angle, sizes of trenches and so on.
I hope you notice how important your drawn lines are! The beauty of this texturing lies in the precision of the pattern; the cutting just makes this pattern 3-dimensional.
